Chocolate Chip Banana Muffins



  • 3 eggs
  • 1/2 cup honey
  • 3/4 cup coconut oil, melted
  • 2 cups almond meal/flour
  • 3 overripe bananas
  • 1 tsp vanilla extract/essence
  • 1 tsp cinnamon
  • 1 tsp baking powder

Optional extras

  • chocolate chips
  • walnuts
  • strawberries, blueberries or raspberries


  1. Preheat oven to 180 degrees.
  2. Line a muffin tin with patty liners.
  3. Crack the eggs into a large bowl and add the honey.
  4. With an electric mixer beat together on medium to high for 2-3 minutes until pale and frothy.
  5. Add the remaining ingredients and mix until blended.
  6. If using fruit add this and stir into the mixture now to avoid the fruit sinking to the bottom of the muffins.
  7. Add any additional optional extras, nuts, chocolate chips etc and mix well.
  8. Place mixture in patty tins and bake for 30 minutes or until golden brown.
  9. Remove muffins from oven and transfer to a wire rack. Allow to cool for 10 minutes.
  10. These muffins freeze really well.
