Seriously, is there anything better than freshly baked muffins straight from the oven? How about a batch of guilt-free muffins; light on sugar and fats, but still bursting full of flavour? These wholesome muffins are super tasty, easy to make and are guaranteed to see you coming back for more!

Having experimented with many muffin recipes over the years, my favourites all seem to have a common thread. They need to be healthy, super tasty, and easy to whip up at a moment’s notice. I also want a recipe that freezes well for my daughter’s school lunches, an easy breakfast treat or mid-morning snack. One of my favourite recipes is one I’ve adapted from Marlies Hobbs’ brilliant book Paleo Cafe. Although I don’t follow a paleo diet, I do like to incorporate a variety of diets, cooking styles into my cooking.

I’ve tweaked the recipe slightly but that’s because I do prefer a more moist texture. I stick to using the bananas, almond flour, honey and coconut oil as a base, and then adding whatever takes my fancy. My daughter favours chocolate chips (naturally), my partner likes walnuts and I love berries. With this basic recipe, it’s easy to add as little or more as you like.

And, while I do agree to separate the eggs gives these muffins a lighter fluffier texture, I have, when short on time mixed in the eggs without separating them and they still come out just fine. I also find they freeze really well! If they last that long that is!

Ingredients
- 3 eggs
- 1/2 cup honey
- 3/4 cup coconut oil, melted
- 2 cups almond meal/flour
- 3 overripe bananas
- 1 tsp vanilla extract/essence
- 1 tsp cinnamon
- 1 tsp baking powder
Optional extras
- chocolate chips
- walnuts
- strawberries, blueberries or raspberries
Instructions
- Preheat oven to 180 degrees.
- Line a muffin tin with patty liners.
- Crack the eggs into a large bowl and add the honey.
- With an electric mixer beat together on medium to high for 2-3 minutes until pale and frothy.
- Add the remaining ingredients and mix until blended.
- If using fruit add this and stir into the mixture now to avoid the fruit sinking to the bottom of the muffins.
- Add any additional optional extras, nuts, chocolate chips etc and mix well.
- Place mixture in patty tins and bake for 30 minutes or until golden brown.
- Remove muffins from oven and transfer to a wire rack. Allow to cool for 10 minutes.
- These muffins freeze really well.
