Hi, I’m Jacqui! Welcome to Brissie Bites – a site dedicated to food lovers! A passionate foodie, I write simple wholesome recipes for busy people who want to whip up quick, fresh and exciting meals. I believe that creating good food doesn’t have to be time-consuming. In fact, you can make a batch of delicious chocolate in 5 minutes flat!!! It’s true!! I create recipes from the heart, (as well as from cookbooks), and always use the freshest, most locally sourced ingredients.
You certainly don’t have to be an iron chef (or any chef) for that matter to cook great food. The recipe for success is simple – a love of food, a bit of imagination and a willingness to learn. I believe cooking is about learning the rules (if you must) and then breaking them. I consider myself a no cookie cutter kinda girl. You only have to see my Christmas Gingerbread men for proof of that!
British born, Aussie bred, I’m certainly a mix of the two! I love Indian curries, medieval castles and roaring open fires, but feel equally at home on an ocean beach, enjoying outdoor barbies (BBQ’s), and glorious year-round sunshine! While London and Sydney have been home for the most part, I’ve now settled on a different pace of life in beautiful Queensland. Brisbane City to be exact (or “Brissie” as it’s affectionately known). With its subtropical climate and laid back vibe, it really is like ‘living the dream’.

I’ll be bringing you first-hand updates on festivals, pop up bars and all things fun! Stay tuned to see my ‘non-creative’ (his words) husband turn his hand to painting – yep we’re both going to paint a masterpiece of the Brisbane Story Bridge as you’ve never seen before (that I can guarantee!!!) at Cork and Chroma. So there will be lots of recipes and reviews but most importantly – lots of fun! I mean hey isn’t that what it’s all about! Oh and there will be travel. Having eaten my way through most of Europe and Asia, (yum and double yum to Hong Kong!!) – I’ll be jetting off later this year to check out the foodie scene in both Canada and the US ( where my overseas pals tell me I’m in for a treat). Oh my goodness – so much food – so little time!!!
